Ingredients (serves 2)
- 150 g fresh Golden Oyster mushrooms (from your grow kit)
- 150 g mixed vegetables (e.g., bell pepper, carrot, snap peas)
- 30 ml soy sauce
- 15 ml sesame oil
- 10 ml sunflower or rapeseed oil (for frying)
- 10 g fresh ginger, finely grated
- 5 g garlic, minced
- 5 ml rice vinegar
- 3 g sugar or maple syrup (optional, for balance)
- 2 g sesame seeds (optional garnish)
Instructions
1. Prepare the mushrooms
Gently clean the Golden Oysters with a soft brush or cloth. Keep small clusters whole for better texture and presentation.
2. Prepare the vegetables
Slice the vegetables into thin strips for quick cooking.
3. Stir-fry aromatics
Heat the frying oil in a wok or large pan over medium-high heat. Add the ginger and garlic, stir-frying for 30 seconds until fragrant.

Increase the heat to high. Add mushrooms and vegetables, stir-frying for 3–4 minutes until just tender but still crisp.
5. Add the sauce

6. Serve
Serve immediately over steamed rice or noodles. Garnish with sesame seeds for extra flavor.
