Golden Oyster mushrooms have a mild, nutty taste and a vibrant yellow color that looks stunning in any dish.

This recipe takes just 15 minutes, keeping the mushrooms tender while letting their natural flavor shine. Serve with rice or noodles for a light, healthy meal.


Ingredients (serves 2)

  • 150 g fresh Golden Oyster mushrooms (from your grow kit)
  • 150 g mixed vegetables (e.g., bell pepper, carrot, snap peas)
  • 30 ml soy sauce
  • 15 ml sesame oil
  • 10 ml sunflower or rapeseed oil (for frying)
  • 10 g fresh ginger, finely grated
  • 5 g garlic, minced
  • 5 ml rice vinegar
  • 3 g sugar or maple syrup (optional, for balance)
  • 2 g sesame seeds (optional garnish)

Instructions

1. Prepare the mushrooms

Gently clean the Golden Oysters with a soft brush or cloth. Keep small clusters whole for better texture and presentation.

2. Prepare the vegetables

Slice the vegetables into thin strips for quick cooking.

3. Stir-fry aromatics

Heat the frying oil in a wok or large pan over medium-high heat. Add the ginger and garlic, stir-frying for 30 seconds until fragrant.

4. Add the mushrooms & vegetables

Increase the heat to high. Add mushrooms and vegetables, stir-frying for 3–4 minutes until just tender but still crisp.

5. Add the sauce

Pour in soy sauce, sesame oil, rice vinegar, and sugar if using. Toss for another 1–2 minutes to coat evenly.

6. Serve

Serve immediately over steamed rice or noodles. Garnish with sesame seeds for extra flavor.
