
Lions Mane Pulled Pork Sandwich
Pulled Lion’s Mane Mushroom Burger (Serves 2)
Ingredients
- 300 g Lion’s Mane mushrooms
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp chili powder (optional)
- Salt and black pepper, to taste
- 100 ml water or vegetable broth
- 100 ml BBQ sauce (smoky, vegan-friendly)
For the slaw:
- 60 g green cabbage, shredded
- 30 g red cabbage, shredded
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup
- 1 tbsp vegan mayonnaise or plant-based yogurt
- Salt, to taste
To serve:
- 2 burger buns
- 4 slices cucumber or gherkin
- Optional: vegan cheese, extra BBQ sauce

Prepare the Lions Mane mushrooms:
Tear the Lion’s Mane into fine, stringy shreds using your hands. -
Sauté the base:
Heat the olive oil in a pan over medium heat. Add the chopped onion and cook until soft (about 5 minutes). Add garlic and cook 1 more minute. -
Cook the mushrooms:
Add the shredded mushrooms and cook for 5–6 minutes until starting to brown. Stir in the spices, salt, and pepper. -
Simmer:
Pour in the water or broth, cover, and simmer for 10–12 minutes. Uncover, stir in the BBQ sauce, and cook for another 5 minutes until thick and sticky. -
Make the slaw:
Mix the cabbage with vinegar, maple syrup, mayo, and salt. Set aside for 10 minutes to soften. -
Assemble the burger:
Toast the buns, layer the pulled mushrooms, slaw, and cucumber slices. Add cheese or extra sauce if you like.
